A dedicated server is a whole physical machine you rent from a host: it provides and maintains the hardware, you operate it remotely. You don't own the machine, unlike colocation where you install your own servers.
Dedicated suits you if you don't want to handle purchasing or a data center; colocation suits you if you already own hardware or want full control. Between the two, the choice depends on volume, duration and control needs.
